Breakfast Potatoes

For over 7,000 years, the potato has been cultivated in South America; however, it was first introduced to North America when it was brought here by Europeans.

A variety of potato dishes are frequently served for breakfast and potatoes are used as entrées or side dishes as well.  Examples of potatoes for breakfast are the commonly known O’Brien potatoes, American fries and hash browns. Zucchini, bell peppers and onions are some of the vegetables that are customarily included in a breakfast potatoes dish.  Cheese, meat and eggs are other common ingredients that are served in breakfast potatos dishes.

The American fries are sought after breakfast potatoes that are made by slicing raw potatoes thinly and then getting them fried in butter.  These fries can be made without the skins or with the skins.  Diced and peeled potatoes are used to make O’Brien potatoes.  Minced pimiento, minced bell pepper and minced onion are combined with the potatoes and are then fried over moderate heat in oil.

Many different types of breakfast potatoes are created by boiling the potatoes whole and then dicing them with the skins still on them.  Green and red bell peppers and onions are sliced and added to a frying pan with bacon fat and vegetable oil.  After the sautéing of the vegetables, the potatoes are placed in the frying pan and cooked until they are brown.

In addition, potatoes for breakfast can be made by using tiny red potatoes which are cut up into sixths that are then boiled until they are tenderized.  After which, the potatoes are added to herbs and vegetables such as squash, red onion and julienne zucchini and then cooked in a skillet.

Frequently, hash browns are served as morning meals or potatoes for breakfast and they come in a number of different forms.  The potatoes could be shredded and heaped together in a pile and then placed on a grill to cook until they are nice and brown.  Usually, they are turned on one occasion during the process of cooking. Additionally, hash browns could be potatoes that are shredded and pressed into patties which are shaped like circles or rectangles.  More often than not, the patties are deep fried until they become heated all throughout.

In addition, breakfast potatoes could include ingredients like cheese, eggs and meat.  Shredded hash browns could be cooked in a skillet and then cheese and ham can be used to top it off.  Shredded hash browns are combined with sour cream, salad dressing, onion and smoked sausage to make sausage potato casserole.

Bacon and Potato Quiche Recipe

Every time I discover a new breakfast dish that is not only delicious, but healthy and easy to make, I get so excited.  I am tired of eating scrambled eggs or boring cereal day after day.  I am someone who likes change, who needs to mix it up every now and then.  Forcing myself to cook more breakfast meals is the perfect way to get out of that rut, regardless of how much I hate cooking first thing in the morning.

After making a couple new dishes recently that turned out fairly well, such as potato and tofu hash and banana bread, I was ready for to step my game up.  I love egg and potatoes together, so I thought adding in some bacon would make an absolutely wonderful treat.  Here is the recipe for my bacon and potato quiche that I came up with:

The Recipe

Ingredients:

  • 4 medium-sized cooked Russet potatoes, chopped
  • 12 eggs – 6 whole eggs w/yolk and 6 egg whites
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 6 strips of bacon, cooked and crumbled

1.  Preheat oven to 350 degrees.

2.  In a large bowl, add the 6 whole eggs and 6 egg whites and whisk together.

3.  In the same bowl, add in the milk and salt and cayenne pepper.  Stir together.

4.  Place the bacon and potatoes in the bottom of a 7 x 11 inch pan.  Pour the egg mixture evenly over the top of the bacon and potatoes.

5.  Put in the oven and bake for 45-50 minutes.  If the middle is not set, cook a little bit longer.

6.  Serve and enjoy!

The quiche came out even better tasting than I thought it would be, and I had high hopes going in.  If you need a healthy breakfast entree for the family or guests, I would point you right to this quiche.
